Just an Average Monday with the Chandlers

On a typical Monday night, Will & I get off work and head straight to the gym. But tonight, we both decided it was a good idea to skip it {Hey, you've got to have a day or 4 for your muscles to re-cooperate right?}

Turns out, it was a great idea. We went to the Fairhope Pier and walked around a bit. 


There is something about sunsets at the pier that are just so peaceful. This type of beauty makes me confident I am moving in the direction the Lord has planned for me. "The heavens declare the glory of God; the sky displays his handiwork. Day after day it speaks out; night after night it reveals his greatness. There is no actual speech or word, nor is its voice literally heard. Yet its voice echoes throughout the earth; its words carry to the distant horizon." {Psalms 19 1-4}

We came home and decided to make a new recipe I found on Pinterest. When I say we, I mean Will watched football and I made Spinach Artichoke Grilled Cheeses for us. Healthy, right?! I forgot some of the ingredients at the store, so I just made up my own variation of the recipe. Here's what I used.


1 tablespoon butter
1 teaspoon spreadable garlic
1 tablespoon flour
1/2 cup almond milk
1 ounce fat free cream cheese
3/4 cup shredded mozzarella cheese
1/2 cup greek yogurt
1/2 teaspoon pepper
1/2 cup (about 5 ounces) frozen chopped spinach, thawed
1 (6.7 ounce) jar grilled artichoke hearts or you can sub marinated artichokes, chopped
Slices of bread

This makes about 4 sandwiches with a little leftover.
1. Melt butter in skillet, at garlic & flour. Cook a minute. Add milk. Cook another minute.
2. Add cream cheese, mozzarella, pepper, and greek yogurt to the mix. Then add artichokes and spinach.
Then you get this!

Add it to your buttered bread and put it in another skillet just like a grilled cheese.

Annnnnnnd... WOOLAHHH!

Obviously, mine doesn't look as pretty as the one in the original recipe, but I can close to guarantee you it was yummier.
